Italian soul, Colombian heart

Salvatore is Italian, Julietha is Colombian, and that fusion is the heart of everything we cook. Two food cultures that both live around the table — long, loud, generous — meeting over saffron rice and a jug of sangria.

We set up in the Adelaide Central Market because it's where the best produce in the city changes hands every morning. Our seafood, our vegetables, our herbs — most of it comes from a few steps away. That's why paella is our signature: it's a dish that only sings when the ingredients are this fresh.

The room takes its cue from the market too — the deep green mosaic in our fit-out is where the olive green you see across everything comes from. Warm, unfussy, a little bit loud. Exactly how we like to eat.
